Plum Cobbler


Paul's brother-in-law brought him a huge bag of yellow plums from the tree in their garden the other day.  They were delicious in a way that only tree ripened fruit can be, sweet, plump and juicy! There was no way that we could possibly eat all of them so I jumped online to look for recipes for something that I could make with them and came across this recipe for plum cobbler.


This recipe couldn't be easier and the result is comfort food at it's best, a classic cobbler!  It's a great way to use up a bunch of plums if you have extras from your garden but I'm pretty sure that you could substitute peaches, pears, nectarines or apricots for the plums or do a combination of fruit...or add some berries...I'm thinking I may have to make this recipe a few more times and experiment!

Plum Cobbler

3/4 cup plus 2 TBSP white sugar
10 fresh plums, sliced and seeded - about 4 cups
2 TBSP corn starch
1/4 tsp ground cinnamon
1 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup butter
1/4 cup milk
1 egg, lightly beaten

Preheat oven to 350 degrees.  In a large bowl, combine 3/4 cup white sugar, plums, cornstarch and cinnamon.  Place the fruit mixture in a 2 quart casserole.

In a medium bowl, combine the remaining 2 TBSP of sugar, flour, baking powder and salt.  Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs.  Stir in the milk and egg until just moistened.


Drop batter by the spoonful onto the fruit.  Bake at 350 degrees for 35 minutes.
